when i am doing my overclock in Ai3 should i be enabling all cores or leave that alone

Depends. I can do 43x on all 4 cores but 44x on only one or 2. So I have 3 and 4 cores set to 43 and 1 and 2 set to 44. My 4470 is not a great overclocker., but I get 44x quite often when only 1-2 cores are in use, and 43 under heavy threaded load.

So it depends on how far you can push it. You'll need to experiment.

Hardware limitation will determine what you can or can not do with your system. Cooling being the key factor.
