So, just a question please.

You plan on running a 2600K at 5.1 for your daily use?

Do you already have the processor and know that it will got to 50 or 51 on the multiplier?

You might want to do a little reading here on the forums about OC'ing on the ROG boards with the Sandy Bridge processors.

good point, think about water cooling at that speed or lots and lots of air

I have been running my 2600K at 5Ghz for a few months now and am able to hold 5GHz on a high end air cooler, I would recommend you use some liquid cooling for better CPU temperatures
Corsair makes an easy to use and effective liquid cooler available here: http://www.newegg.com/Product/Product.aspx?Item=N82E16835181013
and for your motherboard look for the ASUS ROG Maximus IV Gene-Z
