I just ordered a G752VT laptop with the 1TB hard drive and a 128GB PCIe SSD.

I know for a fact that I need a 2TB drive and at least 256GB for my OS so I will just swap the 1TB drive but what should I do with the SSD?

Should I just get another 128GB and raid 0 them or is that not possible on these laptops?

If not I guess my only option is to get a 256GB SSD and sell the original one.

What do you think?

Don't quote me, but I believe that you can Raid 0 the second SSD to the first. Also, like you mentioned, you could sell the original SSD and just keep the single new SSD.
The G752 comes with 2 NVMe m.2 slots for upgrade-ability.

Notebookcheck quoted asus saying g752 doesn't support raid 0 nvme

-> "Asus hat bestätigt, dass es keine Modelle mit RAID 0 gibt, da die aktuelle G752 Generation dies nicht unterstützt. "

ACTUALLY with 205 bios G752VT is configured in RAID mode only to communicate with IRST chipset (in fact for clean install you have to load RAID driver) but there's no support by bios interface to create raid. Have to wait new bios.
