Check the mounting of the new cooler....maybe...
Check the mounting of the new cooler....maybe remount....ayart from scratch...could be CPU is being displaced in socket.
Also check all other connections and make sure board is not contacting... -

V core is pretty much 1 to 1 for your OC these...
V core is pretty much 1 to 1 for your OC these days. Of course general system stability helps...with SA and IO volts being key for RAM. But it is pretty much Vcore that gives you 100 mhz increase......

Well....I've not had a play on a GB board...
Well....I've not had a play on a GB board recently....not sure what their llc settings are like...I guess you'd just have to experiment carefully raising vcore or lowering llc.

Any avx offset....latest Realbench and prime run avx and will pull a lot to run at high ghz. -

That's all core stability so you may run less for...
That's all core stability so you may run less for individual core OCs.
I've used CPUz and HWiNFO...for software readings...for what they are worth. RealBench is a good whole system stress test.... -

From what I've seen of these CPUs...real...
From what I've seen of these CPUs...real stability at 5.2GHz takes more than 1.3v on average.

You can try to set DOCP profile in BIOS.. ...

However 3600 is pushing it for a lot of ryzen memory controlers so you may need to tweak dram voltage and/or soc voltage.
Or try 3200 and tighten... -
