I'm making an educated guess that this Intel ME firmware update has something to do with patching up a critical security vulnerability so maybe that's the reason why rolling back seems to be blocked. Googling up IME turned this up:

I dont' use AI Suites on my Asus motherboards. I prefer tweaking BIOS manually. However, I know others like AI Suite but for the Z370 Series, the AI Suite III (updated) has not yet been released. I am involved with this stuff everyday at www.mousegolf.com .

You can check firmware version from BIOS - after the update it must be version 11.8.50.3470
You can also download the tool from Intel
https://www.intel.com/content/www/us.../software.html
Install it then click DiscoveryTool.GUI folder then run the program. It will say what version is your firmware below

I have learned that there is no going back once 0805 is installed. This is due to the Intel ME security in the new BIOS. The 0805 update works fine for me but it's good to know why it won't allow downgrades through any built-in BIOS Flash method on the Z370-E Gaming Board.
