Stock, 2700x would be much better, like 25% faster or even more (3.7GHz vs 3.0GHz base clock, when all cores loaded, but also when just few cores loaded difference could be higher due to Precision Boost 2 on 2700x).

Overclocked all cores, assuming 4.2GHz 2700x and 3.9GHz 1700, difference would be a bit less, like 15-20% max.

All this, if bottleneck is on CPU... On other hand, if your RAM capacity is not enough or scratch disk is slow, then using faster CPU would not noticeably improve the situation...

Let me help:

1700(x) vs. 2700x
Overclocking: 3,5/5 vs. 4,5/5
Mem support: 3/5 vs. 4,5/5
XFR efficiency: 3,5/5 vs. 5/5
Temp.: 4/5 vs. 4,5/5

+XFR2 is much more efficient than XFR.
+2700x lower temps on high frequencies (up to 4.1 GHz)
etc.

I hope it'll help...

I own both, i have a 1700x on a Gigabyte 370x G5 and a 2700x on a Asus CH 7 Hero.

The difference is a lot, from stability to gaming and rendering.

the 1700x you could get it to 4.0 but hardly stable and you will get lots of heat on the VRM and CPU. At defaults it works just fine you can also do some stable OC to 3.9ghz now. the 2700x at stocks manages to clock almost to its highest you will get around 3.9 to 4.1 at stock settings while gaming or rendering of course the cpu will hit 4.35 as well with no problems, but with the ch7 you can do some tweaks and it will hit 4.35 on single workloads with no problem 100% stable and at low temps and you could also get 4.0 to 4.1 or even more on multi core op. And on Overclocking you are aiming to 4.2 super easy with very decent temps.

The best one (for everything) is ... Intel Core i7 8700K
😉

Intel Core i7 8700K is better from any point of view:

1) 5-10% faster in almost any benchmark (you can find dozens of them over the net)
Example: https://www.techspot.com/review/1655-core-i7-8700k-vs-ryzen-7-2700x/

2) includes the Intel UHD Graphics 630 (very good option if you don't have discrete GPU)

3) similar price with Ryzen 2700X
