The difference is a lot, from stability to gaming and rendering.
the 1700x you could get it to 4.0 but hardly stable and you will get lots of heat on the VRM and CPU. At defaults it works just fine you can also do some stable OC to 3.9ghz now. the 2700x at stocks manages to clock almost to its highest you will get around 3.9 to 4.1 at stock settings while gaming or rendering of course the cpu will hit 4.35 as well with no problems, but with the ch7 you can do some tweaks and it will hit 4.35 on single workloads with no problem 100% stable and at low temps and you could also get 4.0 to 4.1 or even more on multi core op. And on Overclocking you are aiming to 4.2 super easy with very decent temps.
