When running LTSC, should I use default drivers?

I downloaded the intel chipset drivers from Asus' website for my Strix Z370-E and installed them? Was this a mistake on LTSC?

Would it actually downgrade them if they were older?

Typically Windows will use the newest driver. So I think if you run the installer for an older driver it will not downgrade. But the way Windows works currently is that it is constantly checking for better drivers. If it thinks it has a newer driver in its repository it will replace the driver you installed anyway.
