should I enable XMP on Asus Rampage V Extreme with Xeon
Currently my 2666MHz RAM works at 1866MHz probably cuz of CPU limitation ,Xeon E5-2640 V3.
I set target DRAM frequency to 2666MHz which is default by memory modules of Corsair but then MB didn't want to post.
So I had to remove CMOS battery as adviced to reset the BIOS.
So I'm curious to know should I enable XMP (RAM supports it),would the board POST and what benefit if any would I get with it?

I did some recent testing with a E5-2620 V3. Just like your 2640 it only supports DDR4-1600 and 1866.
No, I don't think you can not set XMP. This will set the RAM speed to 2666 which is not compatible with the CPU and will prevent the system from booting.
You should not need to clear CMOS.
You should be able to get to BIOS by hitting the little red "safe boot" button on the motherboard.
If you wish to improve RAM performance you could try lowering your timings. I got down to something like 9-9-9-nn with DDR4-3600 running at 1833. Benchmarks improved slightly - no real difference in day-to-day work.
