The microcode for 10900k is still E2, so no change since 2301 for 10th gen microcode. The microcode for the 11900k for 2301 is 3C, for 2403 it is 50.
I believe there were no ME firmware updates, but not 100% because I am running a higher version than any from Asus, which I would not recommend.

ME firmware you can always run the latest, ASUS is just behind all the time. But then again, so are most motherboard manufacturers, despite the fact they have access to the latest versions directly from Intel, they are just lazy.

Yes, you can undo it, but it's a bit more complicated. Plus, all of these firmwares come directly from Intel, so where is the risk ?

Of course you can, the fact that you do not know how does not mean that's actually the case.
Also, YOU, or any end user, cannot get any firmware and software from Intel, you get it from other people who get it from other people who get it from Intel, the issues are caused by the lack of knowledge on how to use the tools.

Hello , i dont think there any risk of break' the motherboard or sometime like that if it come from intel , the other think probably asus dont update in the official driver motherboard page for lazy , no idea , but even an firmware ofifical from intel but no tested by asus can be a problem to your motherboard
the companies make mistake sometime , for example the z490 the first revisions come with problem intel lan

if you still facing a problem and it necesary update the firmware beacuse you troubleshoot already other options i understant you , are you facing boot loop ? or your system is vulnerable when you check the intel ME ?

for example i facing a problem very very wierd with world of warcraft i use 2070 super FE my monitor 75 hz max asus pro art 27 inch 1440p , but i have to drop the hz monitor to 60 hz , beacuse if i up to 75 the game starting to lag and i enable vertical sync so video card run with monitor and the fps no drop even if i disable vertical syn fps go over 100 and still lagg , usually when is graphics lag the fps drop , but is not my case , i go to bios and select pci express from auto select to gen 3 , i format my PC install drivers and windpws update and then download world of warcraft PC so clean and still lag , idk if my video card is already broken can only run WoW at 60 fps , the power supply is not the problem is 850 watts enought power , i try diferent port monitor hdmi , display port also i put another monitor and problem persist so is not my monitor

Maybe for some people, but that is not where my issue came from. It was from the firmware. And, some of those firmware are meant to be internal for Intel and can have bugs that an vetted official release would not. In other words, you don't know what your are getting even if you know how to properly use the tools to construct an ME image from components which you have no information about except their version. .

No such internal use firmware ever gets realeased, I have no idea what you are on about, really. Or rahter, those parts of the firmware do not get released unless Intel makes a mistake, which ... well, they did. But the mistake made it's way into all the motherboards using that specific firmware version and all were OK.
I do wonder, how exactly do you think ASUS or any other motherboard manufacturer gets and builds those firmware updates ? Because you make it seem like some sort of magic. They get the same tools and the same firmware versions and parts available to you, only they get them by official channels, that's all. And all the info is available to you as well, if you know where to look.
But yes, I do agree, most people should NOT update their ME firmware, as a matter of fact, they sould not update the BIOS either, as long as everything works fine. And that is because there is always a chance of something going wrong, and given the knowledge level of the average PC user....I would say most should not even update the drivers, or build their own PC, which actually most people do not.
The idea is that some things should be left to the specialist, who knows what to do even if things go wrong. If one has no idea how to recover when something goes wrong, definitely should NOT update anything.
