Interesting, 1004 had two versions for TUF B550-plus: 2020/08/17 and 2020/08/18, apparently the same.

Now it's working with 4 memory slots (4x8gb 3200mhz, hyperx predator). With 1002 it crashes and gives bsod several times.

    0805 to 1004
Memory latency increases 65.1 to 65.6ns
I cant find anything else changes.
    Ryzen 3700x and 1866MHz 14-16-14-32-46 timings on b-die memory.

My build was finally stable with DOCP on 1002 BIOS, tried 1004 but the random restarts came back instantly. I reverted back to 1002 and contacted ASUS about it but they seem to ignore me...

Do not use DCOP or XMP, but 1usmus DRAM Calculator and I am most sure your problems will end.

    I would also disable ERP.
