Confused after overclocking attempt

So I tried to use the AI overlock on my Z390-f Gamer and my i9900k
It said I could do 4700hmz so I put it on that and worked well for a day, then it started to crash, both just restarts, freezes and bluescreens.
So I put it back, also tried XMP on the ram, which went downhill even faster with total freezes or restarts as soon as I got into windows.
So I put everything to default again. But I downloaded CPU-Z to check stuff and it claims my clock speed is around 4700hmz, down to 4698 as lowest but sometimes flying up to 5000. I don't get it, when I start it now the computer does not say overclock 38% which it did when I started it when i had it on AI overlock.
It also claims my ram is running at 4300mhz and not the 3600 which is the default. The ram is G.Skill TridentZ DDR4-3600 C15 DC SR - 16GB
