Hi sp33d3ple,
first of all, COOL setup!
🙂Maybe I can't help you with your ARES 3 problem but maybe I can give you some useful information about the displayport hub and scalability.
I'm running a 6 monitor setup (with a displayport hub) myself without any problems, using the following hardware:
GPUs:3x MSI 290X Lightning ( 2xDVI, 1x HDMI and 1x Displayport per card)
Monitors:Samsung MD230x6 Monitors @5760x2160 resolution
HUB:EVGA Displayport HUB 1->3 DP
Using the hub is working without a problem, the hub and CCC instant detects the signal an put it throuth to the connected monitor, scaling is superb - there is no (noticable) delay/micro-stutter/color problem.
The thing wich could be a problem with your system is, that
you have to connect all cables and the hub(s)
to your main GPU (in order to get a single desktop) and thus the ARES 3 does only have 3 output ports, it could run you into a problem, except if you could "stack" the DP-hubs, but idk if that is possible?
I hope I could help you an others (at least a bit)
🙂PS.: I hope its gonna work out for you, share some pics when you're set up
