The only thing I seem to use AI Suite for is to control fan speeds. It seems like overkill. Is there some other application I can run
to control my fans?

I'm picky about having software running in the background all of the time, so I use the fan control ability of the motherboard - accessible in the BIOS setup.

I don't know your hardware configuration/cooling requirements, but I have my CPU/GPUs/MB water cooled; for this, the "Silent" fan speed setting is very sufficient in the BIOS setup.
