I need a tutorial or explanation of the overclocking options ASUS CROSSHAIR V FORMULA-Z.
There are many options. I intend to put it to 5100mhz +.

You are asking a lot from your chip. 5.1GHz will not be achievable, especially with Air Cooling.

Some have achieved 5.1GHz using Corsair H110 AIO liquid Cooling.

I tried to use that vid a few month ago but the bios is different. There are a lot more options now.

What different options are you referring too? The vid depicts the EUFI bios and its the same as mine.
The only updated Bios version i'm aware of is to address an issue with some USB devices and stability.
No doubt you have researched here on this forum for Bios Tweaks and should have found some decent threads and articles relating to OCing your CPU.

btw, Your PSU is borderline for any serious OC.
