So the harddrive in my g750jm (or g750j) failed and wouldn't boot, so I replaced it with a new one and reinstalled Windows 10. However, I cannot activate the copy for some reason.
My understanding is that the activation key is embedded in the BIOS, but it seems that it cannot find it. How can I solve this?
Also this laptop came with Windows 8, so should I had installed Win8 instead of Win10? Is that what's causing the issue?
Are you sure you installed to correct version of windows 10? if so I would give MS a support call, you are correct that Windows 10 activation servers should have been able to recognize your hardware.

In the future if you have any issues you can bypass the activation and install anyhow then use a M$ chat session that can be launched Start>all apps>contact support. They will help sort it out.
