A 6700K will not bottleneck twin 1080's in SLI. Even an i5 would be fine for gaming.

Gaming is more a function of video card performance. More graphic horsepower = more FPS.
Intel i9 10850K@ 5.3GHz
ASUS ROG Strix Z490-E
Corsair H115i Pro XT
G.Skill TridentZ@ 3600MHz CL14 2x16GB
EVGA RTX 3090 Ti FWT3 Ultra
OS: WD Black SN850 1TB NVMe M.2
Storage: WD Blue SN550 2TB NVMe M.2
EVGA SuperNova 1200 P2
ASUS ROG Strix Helios GX601

If money is no option, go with the i7-6850K.

thank you , this is a midlife crises build 🙂 , I want to do a the build that would be best for gaming as I have fun with it , also a little future proof , all the research I do comes back between 6700k vs 6800k, or 6850k now kabylake is coming but still 4 cores , if you can advise on the best build for gaming it would be great . sorry to be a pain , also chino , I love your post very helpful

Unfortunately, there is no such thing as future proofing. But enthusiasts platforms like X99 have a longer timespan than mainstream platforms like Z170. In our current era, an i7 is pretty overkill for gaming. But if you want it to last, a 6 core CPU will be more "futureproof" than a 4 core. 😛
