Follow these steps to solve graphics issues on NUC Kit NUC8i7HNK:

Make sure all drivers are installed and are up to date. You can use Driver & Support Assistant ( DSA) to automatically search and install the latest drivers for NUCs.
Make sure the BIOS is up to date. Please check the BIOS Update Instructions for NUC to see different options to update the BIOS.
Set BIOS to defaults and test minimal components.
